Sweet potato protein pancake recipe

Something different today, high in protein, high-moderate in slow-carbs, almost zero-fat. If you do add the almond flour and use coconut oil to bake you'll add fats, good ones though. Excellent as a pre-workout meal.

Prep-time: if your sweet potatoes are pre-baked, a few minutes!

- 150-200gr baked sweet potato
- 150-200ml's liquid egg whites
- 1 scoop of vanilla whey protein powder (~25gr)
- sweetener: sucralose, stevia or sucralose-based syrup
- cinnamon
- optional: 20-40gr of almond meal/almond flour/ground almonds
- optional: a pinch of baking powder
- coconut oil or cooking spray

Blend all ingredients in a blender. Spray your cooking pan with some cooking spray or coconut oil. And then guess what? Simply make pancakes with your blend! :-)

These pancakes are quite sweet already, depending on the amounts of sweetener you've added of course but if you want to top them off with some extra syrup you can always put on a sucralose-based syrup like Walden Farms Pancake Syrup.


Tip: adding cinnamon to carb recipes slows your body's insulin response to them, meaning you'll keep your blood sugars more stable.
